Ingredients
1/2 cup mayonnaise
1/4 cup dijon mustard
2 tbsp. honey
1/4 tsp. kosher salt
1/2 tbsp. lemon zest
4 oz. cream cheese, softened
24 slices thin sliced whole wheat bread
1 medium apple, thinly sliced
1 pkg. thin sliced charp cheddar cheese slices
1 cup arugula
Blend
To make spread, whisk together mayonnaise, Dijon mustard, honey, salt, and lemon zest in a medium bowl until smooth. Add cream cheese and mix until fully incorporated.
Assemble
Lay out 12 slices of bread and spread each with an even layer of prepared spread. Top with shredded chicken, divided evenly. Layer apple slices, cheese slices, and a small handful of arugula on top of each sandwich. Spread a thin layer of mixture on one side of each remaining bread slice and place on top of arugula, spread side down, to close sandwiches.
Finish
Trim crusts, then slice each sandwich into triangles or fingers.
