Ingredients

12 oz. Bocconcini (mini mozzarella balls)

1/2 cup mini pearl grape tomatoes

1/2 cup baby spinach

non-stick cooking spray

20 skewers (short brochettes)

3 tbsp. apricot jam

3 tbsp. apple cider vinegar

2 tbsp. balsamic vinegar

1 tbsp. water


Step 1

For Glaze: In a small skillet, warm apricot jam and 1 1/2 tablespoons apple cider vinegar over medium heat until well combined. Add balsamic vinegar, bringing mixture to a boil before reducing flame to low. Allow ingredients to simmer for 1-2 minutes, then transfer mixture into a heat resistant dish. Whisk in remaining apple cider vinegar, then water, until a dressing-like consistence is achieved. Set aside.

Step 2

Preheat oven to 400°F. Place a single layer of frozen chicken on a well greased baking sheet, making sure that chicken is spaced evenly. Bake chicken on the middle oven rack for 15 minutes until crispy and golden, then set aside to cool.

Step 3

While chicken cooks, thread skewers with a tomato, a spinach leaf, and a mozzarella ball. Once cool enough to handle, thread a piece of chicken to the end of each stick.

Step 4

Whisk glaze and drizzle over skewers. Plate and serve immediately, pairing with extra glaze on the side if desired.
