Ingredients
1 egg
1/4 cup breadcrumbs
1/4 cup finely grated carrot
1/4 cup finely chopped spinach or zucchini
2 cloves garlic, minced
1 tsp. onion powder
1/2 tsp. salt
BBQ sauce
Mix all ingredients and roll into 1.5-inch meatballs.
Preheat air fryer to 375°F.
Cook in batches 12–15 min until golden and cooked through.
Toss meatballs in BBQ sauce.
Serve with air-fried potato wedges and corn.
TIPS FOR STORAGE:
The Air Fryer Chicken Meatballs made with Perdue Ground Chicken will keep in the refrigerator for up to 4 days when stored in an airtight container. Let them cool completely before storing. Keep them in a shallow, sealed container or resealable bag. Reheat in the microwave, oven, or air fryer (350°F for 5–6 minutes) until warmed through.
FREEZER OPTION:
For longer storage, you can freeze the cooked meatballs: Freeze on a baking sheet in a single layer, then transfer to a freezer bag. They’ll last up to 3 months frozen. Reheat straight from frozen in the oven or air fryer.
