Ingredients
4 oz. cream cheese, softened
1 tbsp. finely chopped fresh dill
1 tbsp. finely chopped fresh basil
1 tbsp. lemon juice
1 tsp. lemon zest
1/2 tsp. kosher salt
24 slices thin white bread
1 large cucumber, thinly sliced
Mix
To make spread, combine cream cheese, dill, basil, lemon juice, lemon zest, and salt in a medium bowl. Mix until smooth and evenly incorporated.
Assemble
Lay out 12 slices of bread and spread each with an even layer of prepared spread. Top with shredded chicken, divided evenly. Layer thinly sliced cucumbers on top of each sandwich. Spread a thin layer of mixture on one side of each remaining bread slice and place on top of cucumbers, spread side down, to close sandwiches.
Finish
Trim crusts, then slice each sandwich into triangles or fingers.
