Ingredients
1/2 cup creamy peanut butter
1/4 cup soy sauce
1/4 cup warm water
12 rice paper wrappers
1 1/2 cups shredded carrots
1 1/2 cups shredded purple cabbage
1 large cucumber, julienned
1 cup fresh mint leaves
1 cup fresh basil leaves
Whisk
To make peanut sauce, whisk together peanut butter, soy sauce, and warm water in a bowl until smooth. Adjust with additional water as needed to reach a pourable consistency. Set aside.
Soften
Fill a shallow dish with warm water. Dip rice paper wrappers, one at a time, into water. Soak for 5 to 10 seconds or until just softened. Lay wrappers flat on a clean work surface.
Assemble
Place about ¼ cup chicken, ⅛ cup shredded carrots, ⅛ cup shredded cabbage, a small handful of cucumber strips (about 2 to 3 tbsp.), 4 to 5 mint leaves, and 3 to 4 basil leaves in the center of each wrapper. Fold in the sides of each wrapper, then roll tightly from the bottom up.
Serve
Serve rolls immediately with peanut sauce for dipping.
