Ingredients
2 cup cooked sushi rice
2 tbsp rice vinegar
1 tbsp sugar
1 tsp salt
1 tbsp sesame oil
1 avocado, sliced
1 cucumber, sliced
1 tsp sriracha
2 tbsp neutral oil
Chopped scallions and sesame seeds for garnish
Step
Mix rice vinegar, sugar, and salt into warm sushi rice. Let cool.
Step
Form small rectangular rice "patties" and crisp both sides in oil over medium heat until golden, about 3–4 minutes per side.
Step
Top each crispy rice piece with sliced cucumber and warmed Short Cuts.
Step
Drizzle with sriracha, sprinkle with scallions and sesame seeds.
