Ingredients
1 pkg. PERDUE® SHORT CUTS® Italian Style Chicken Strips orPERDUE® SHORT CUTS® Rotisserie Chicken Strips
2 tbsp. olive oil
1 loaf focaccia, cut into 4 pieces then cut each piece in half
4 tbsp. prepared basil pesto*
1 cup baby spinach leaves, stems removed
1/2 cup roasted red pepper, thinly sliced
1/2 medium red onion, thinly sliced
4 slices provolone cheese, cut to fit inside bread
Step 1
Preheat griddle to medium. Brush outside of focaccia slices lightly with olive oil. Spread inside of focaccia slices with pesto.
Step 2
Place on bottom slices, dividing evenly: spinach, red pepper, chicken, onion and cheese. Place focaccia tops over sandwich and press firmly together.
Step 3
Grill on medium heat about 4 minutes until lightly browned on both sides and cheese is starting to melt.
