4 PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breasts, Mesquite Grille Flavor (1.5 lbs.)
2 tablespoons olive oil
1 can (15 ounces) black beans, drained and rinsed
1/4 cup scallions, sliced
1/2 cup roasted red peppers, diced
1 1/2 cups fresh mango, diced
2 tablespoons lime juice
8 lettuce leaves, firm and intact
hot sauce, to taste
1 Grill chicken breasts 3-4 minutes per side or until firm to the touch. Remove from the grill and keep warm.
2 In a bowl combine remaining oil, beans, scallions, red peppers, mango and lime juice; season with hot pepper.
3 Place 2 lettuce leaves on each plate. Divide salad among 4 plates. Top each with a grilled, sliced chicken breast. Serve salad and sliced chicken in lettuce as a carrier.
