|2||cups prepared spaghetti sauce|
|4||slices mozzarella cheese|
|1/2||pound penne pasta, cooked|
|2||cups zucchini and yellow squash, cooked|
|1/4||cup chopped parsley, for garnish if desired|
Divide the cooked penne among 4 pasta bowls or plates and top with more spaghetti sauce. Place a warm chicken breast on top of spaghetti sauce.
Preheat oven to 400°F. Spray foil covered baking tray with non-stick cooking spray. Remove 4 fillets from plastic pouch using corner ez-peel tab. Place the fillets on the tray and bake on middle oven rack for 15 minutes. Turn over and top each fillet with some spaghetti sauce and a slice of mozzarella cheese. Bake for 10 to 12 minutes more or until fillets reach 170°F internal temperature and the cheese has melted.
Serve Parmesan and Herb Chicken Breast Parmesan with a side of sautéed squash and crusty bread or garlic knots. Garnish with chopped parsley if desired.
