INGREDIENTS
1 pkg. PERDUE® Oven Ready Boneless Chicken Roast (1.75 lbs.)
1 tablespoon vegetable oil
1 cup Granny Smith apples, diced
1 cup red-skinned apples, diced
1/4 cup shallots, minced
1 cup apple cider
1/2 tablespoons cider vinegar
3/4 cup celery, finely diced
1/4 cup fresh parsley, minced
1/4 teaspoon hot red pepper sauce
INSTRUCTIONS
Step 1: 
Place oil in a skillet and heat. Add apples and shallots and saute 3-4 minutes. Add cider and vinegar and bring to a boil. Reduce heat and simmer until glazed (6-8 minutes). 
Step 2: 
Remove from heat, add celery and let cool to room temperature. Set aside. Add parsley and hot sauce, if desired. Serve hot or at room temperature.
Step 3: 
To serve, spoon 1/2 cup apple relish on a plate.
