|4||large plum tomatoes, chopped|
|3||cloves garlic, finely chopped|
|3||tablespoons chopped fresh basil leaves|
|2||teaspoons balsamic vinegar|
|1/8||teaspoon black pepper|
|1/2||cup (2 ounces) Parmesan cheese, shredded (optional)|
Heat chicken according to package directions.
Meanwhile, mix tomatoes, garlic, basil, balsamic vinegar, pepper and olive oil in a large bowl. Spoon tomato mixture evenly onto heated chicken.
Top each cutlet with a sprinkling of Parmesan cheese, if desired and serve warm.
