1 can (14.5 oz.)diced tomatoes
1 can (14.5 oz.)white beans, drained
2 cupsreduced-sodium chicken broth
2 tbsp.chopped fresh sage or parsley, optional
6 slicescrusty Italian bread, optional
Heat oil in a soup pot over medium-high heat; add onions and sauté 4 to 5 minutes, stirring often. Slice sausage and add to pot, sauteing another 3 to 4 minutes or until starting to brown.
TIP: Freeze individual portions of soup in containers or sandwich bags for on-the-go lunches for work. Lifestyle Tip: Downsize your dinner plates. Studies find that the less food you have in front of you, the less you're likely to eat.
Add tomatoes, white beans and chicken broth and simmer 5 to 8 minutes.
Ladle stew into 6 bowls, 1 cup per serving. Garnish each bowl with a sprinkle of sage or parsley and serve with a slice of bread, if desired.
