2 tablespoons olive oil
2 cups sweet onion, diced
1 can (14.5 ounces) diced tomatoes
1 can (14.5 ounces) white beans, drained
2 cups reduced-sodium chicken broth
2 tablespoons chopped fresh sage or parsley, optional
6 slices crusty Italian bread, optional
1 Heat oil in a soup pot over medium-high heat; add onions and saute 4-5 minutes, stirring often. Slice sausage and add to pot, sauting another 3-4 minutes or until starting to brown.
