|1 1/4||cups shredded carrots|
|1 1/4||cups red bell pepper, diced|
|1||cup water chestnuts|
|1/3||cup stir-fry sauce|
|1||cup scallions, sliced, optional|
|1||cup fresh cilantro, minced, optional|
|12||Romaine lettuce leaves|
In a large non-stick skillet, mix together ground turkey, carrots, peppers, water chestnuts, water and stir-fry sauce. Bring to a simmer and heat through, approximately 2 minutes. Remove from heat and mix in scallions and/or cilantro and keep warm.
TIP: Variations: Serve over udon or soba noodles. Serve as a topping for pasta, rice or salad. Use filling inside of bell pepper halves. Use as a warm sandwich or omelet filling.
