||Preheat oven to 350°F. Rub with oil and season with salt and pepper to taste. Place in a medium roaster pan.
||In a large bowl, mix together the sauerkraut, shallot, carrots, apples and cranberries. Spread sauerkraut mixture around the breast in the roaster pan.
||Pour chicken broth over sauerkraut mixture. Bake, uncovered, and baste occasionally, adding water to the pan if needed. Breast is done when the PERFECT ROAST® Thermometer pops up, or a thermometer inserted into the thickest part of the breast reaches 170°F, about 1 3/4 hours.
