1 pkg. PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
6 slices of ham
Sufficient oil to brown chicken
2 cups cider
1 cup broth
1 cup chopped onions
1 cup chopped carrots
1 cup toasted pine nuts
1 cup fried baby squash
Salt and pepper to taste
1 Introduce a sharp knife in the widest part of each chicken breast and make a deep incision to insert a ham slice into each breast.

2 In a pan heat the oil and brown chicken on all sides.
3 In an oven-safe dish mix oil, cider, broth, onions and carrots. Put the stuffed breasts on top of this mixture.
4 Cover and bake for 45 minutes at 325° F.
5 Remove the breasts, strain the sauce and heat until sauce is reduced by half.
6 Baste the breasts with this sauce.
7 Serve with toasted pine nuts and accompany with fried baby squash.
