Heat a lightly greased grill or grill pan to medium-high heat. Brush chicken with olive oil and season with salt and pepper, then grill 7 to 8 minutes on each side. Chicken is done when it feels firm to touch and meat thermometer inserted in center reaches 170°F. Remove chicken from grill and let rest 3 to 5 minutes, then slice into strips.
