Ingredients
1 pkg. PERDUE® Sweet Italian Turkey Sausage (1 lb.) or PERDUE® Hot Italian Turkey Sausage (1 lb.)
1/2 eggplant
1 yellow squash
1 zucchini squash
1 small red onion
6 plum tomatoes
2 teaspoons garlic salt
2 teaspoons oregano
1 tablespoon olive oil
6 squares heavy duty aluminum foil
Instructions
1 Cut eggplant, squash, onion and tomatoes into small chunks.
2 In large bowl, mix vegetable chunks with garlic salt, oregano and olive oil. Divide mixture evenly among 6 squares heavy duty aluminum foil and create packets by double folding each end of the packets and then double folding the top.
3 Put packets and sausage on lightly oiled grill. Cover and cook over medium high direct heat for 10 to 15 minutes, or until vegetables are soft and sausages reach 180° F when a meat thermometer is inserted.
4 Remove from the grill, and carefully open the packets form the side, then the top, being careful to allow steam to escape.
