1 PERDUE® Fresh Whole Chicken
Salt and pepper to taste
Paprika to taste
Rioja Wine Sauce:
1/2 pound butter or margarine
2 chicken bouillon cubes
4 tablespoons flour
2 cups hot water
2 cups red Rioja wine
1 Season chicken with salt, pepper and paprika; place in 350º F. oven.

2 Cook chicken for 1 hour or 20 minutes per pound, or until thermometer reaches 180°F. when inserted in the thickest portion of the thigh.
3 Meanwhile, in a pan melt the butter, add chicken bouillon cubes and flour, and bring to a boil; add hot water and wine. Cook until mixture thickens, stirring constantly.
4 Baste the chicken occasionally with sauce.
5 Serve chicken with remaining Rioja Wine Sauce.
