||In a large, non-stick skillet, heat oil over medium heat. Add onions and saute until tender (2-3 minutes). Stir in ground turkey and sauce and simmer for 2 minutes, until heated through.
Add 3-4 cups arugula or spinach just before serving.
Add 1 can drained and rinsed white beans to the turkey and sauce.
Mix in 2 cups sauteed wild mushrooms with chopped fresh herbs for topping pasta or rice.
Use as a filling for lasagna.
