1 pkg.(5.6 ounces) couscous with toasted pine nuts

1/3 cupdark or light raisins

1 orange, yellow or red bell pepper, seeded and diced

1/4 cupchopped or slivered red onion

2 tablespoonsminced fresh cilantro or parsley

1/2 cupbalsamic vinaigrette dressing, divided

1 head romaine lettuce


Step 1

Prepare couscous following package instructions. Add raisins and fluff with a fork. Place couscous in a large bowl and allow to cool.

Step 2

Add chicken, pepper, onion and cilantro. Add 1/4 cup vinaigrette and toss together gently, but thoroughly.

Step 3

Serve salad on a bed of romaine and drizzle with remaining dressing.
