4 PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breasts, Mesquite Grille Flavor (1.5 lbs.)
2 cups cooked cous cous
1 cup grilled asparagus, cut into 1 inch pieces
1 cup red bell pepper, diced
1/2 cup scallions, sliced
1/4 cup crumbled feta
1/4 cup prepared lemon vinaigrette
2 tablespoons toasted pine nuts
1 Grill chicken breasts 3-4 minutes per side or until firm to the touch. Remove from heat and keep warm or bring to room temperature.
2 In a bowl combine remaining ingredients and toss to coat.
3 Divide salad among 4 plates. Place a grilled chicken breast (whole or sliced) along the side of the salad and serve.
