Ingredients
1 pkg. PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
3 tablespoons vegetable oil
3 tablespoons lemon juice
1 tablespoon grated fresh lemon peel
1 tablespoon minced shallot or scallion
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme leaves
Salt and ground pepper to taste
Instructions
1 In wide, shallow bowl, combine oil, lemon juice, lemon peel, shallot and seasonings. Add chicken and turn to coat well. Cover and marinate in refrigerator at least 30 minutes.
2 Prepare outdoor grill for cooking or preheat broiler. Drain marinade into a small saucepan and bring to a boil over high heat; set aside.
3 Grill or broil chicken 6 to 8 inches from heat source 15 to 20 minutes until meat thermometer inserted in center registers 170º F. During cooking turn chicken 2 to 3 times, brushing occasionally with reserved marinade.
