Ingredients
4 PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breasts (1.5 lbs.)
1/4 cup corn oil or vegetable oil
1/2 teaspoon ground annatto or saffron
1/4 cup finely chopped onion
2 garlic cloves, minced
1 tabelspoon fresh lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground red pepper
Instructions
1 Preheat grill or broiler.
2 Mix oil, annatto, onion, garlic, lemon juice, cumin, salt and red pepper in a small bowl, until blended.
3 Grill or broil chicken breasts, turning occasionally and brushing with seasoning mixture for 15 minutes or until meat thermometer inserted in center registers 170°F.
