1 pkg. PERDUE® Fresh Lean Ground Turkey (1 lb.) or PERDUE® Fresh Ground Chicken (1 lb.)
1 carrot, peeled
1 small zucchini, scrubbed and ends trimmed
1 medium yellow onion, peeled
1/2 cup Italian seasoned dry breadcrumbs
1 egg or liquid egg substitute
1 tablespoon dried Italian herb seasoning
1 teaspoon salt
1/4 teaspoon ground pepper
Spaghetti with marinara sauce (optional)
1 Preheat oven to 375° F.
2 In food processor, coarsely shred carrot and zucchini; chop onion.
3 In mixing bowl, combine turkey with vegetables and remaining ingredients.
4 Divide mixture into 4 equal parts. Pat into lightly greased mini-loaf pans or form small, free-form loaves and place on greased baking sheet. Bake loaves 35 to 40 minutes, or until loaves spring back to the touch and meat thermometer inserted in center registers 170° F.
5 Serve loaves with spaghetti and marinara sauce, if desired.
