3 cups(about 5 ounces) mixed salad greens
1/2 cupshredded carrots
2 apples, red or green, cored and cut into half inch cubes
1/2 cuptoasted or candied pecans
1/2 cupdried sweetened cranberries
1/2 cupblue cheese crumbles, optional
1 1/2 tablespoonsapple cider vinegar
4 1/2 tablespoonsolive oil
Combine salad greens, carrots, and apples in a large mixing bowl.
Whisk together vinegar, honey, oil, salt and pepper in a small bowl. Reserve 4 tablespoons of dressing and pour remainder over salad greens.
Evenly divide greens over 4 serving platers. Top with chicken, pecans and blue cheese, if desired. Drizzle with with remaining dressing and serve.
