In light of concerns over Coronavirus (COVID-19), we’d like to share the following:

COVID-19 is Not Considered a Food-Borne Pathogen

Per the Centers for Disease Control and Prevention (CDC), COVID-19 is most commonly spread between those who are in close contact with each other, and through respiratory droplets produced when an infected person coughs or sneezes. It may also be possible for a person to contract COVID-19 by touching a surface or object that has the virus on it and then touching his or her own mouth, nose or possibly eyes, but this is not thought to be the main way the virus spreads. We have strict biosecurity protocols throughout our farms and entire supply chain, including proven sanitation methods which minimize the risk of contaminated surfaces.

Perdue Farms Takes Food Safety Protocols Seriously

We have the highest standards of biosecurity and food safety, and fully sanitize our facilities every 24 hours. We are closely monitoring affected areas and reiterating our biosecurity policy to help minimize the potential to transport possibly contaminated surfaces. The staff at the onsite Wellness Centers at 19 of our facilities are trained on how to protect our associates from, and identify and respond to, symptoms of COVID-19. These professionals follow standard operating procedures as defined by the CDC for infectious diseases. The Wellness Centers are available to all associates and their families. We are taking every precaution to protect our associates, communities, customers and business partners, and ensure the continuity of our business.

All of our animals are born/hatched, raised, harvested and processed in the U.S. As with most large businesses, we source some (non-food) elements of our supply chain from countries outside the U.S. We are closely monitoring affected areas and reiterating our biosecurity policy to help minimize the potential to transport possibly contaminated surfaces.

1 tbsp.Shaoxing rice wine (optional)

1/2 cupred wine vinegar

1/2 cupfresh orange juice

4 tbsp.honey

2 tbsp.soy sauce

1-inch piece ginger, finely grated

2 tsp.chili-garlic sauce

2-3 tbsp.coconut or peanut oil

1/3 cupplus 1 tablespoon cornstarch

2 tbsp.cold water

1 tbsp.toasted sesame seeds, for garnish

1 tbsp.chopped chives, for garnish

Cooked brown rice, for serving

Steamed broccoli, for serving

Chop

On a plastic or dishwasher safe cutting board, chop the chicken breasts into 1-inch pieces. Toss with Shaoxing rice wine and marinate for 10 minutes.

tip TIP

TIP: Shaoxing wine is a Chinese cooking wine made from rice. It can be found in most supermarkets in the Asian food aisle. Substitute dry sherry or just leave out.

Combine

In a medium bowl or large glass-measuring cup, combine the red wine vinegar, orange juice, honey, soy sauce, ginger, and chili-garlic sauce. Mix well and set aside.

Stir Fry

In a large wok or non-stick skillet, heat the oil over medium heat. Toss the marinated chicken with 1/3 cup cornstarch. Add the chicken cubes to the hot wok and stir-fry for about 7 to 10 minutes, until the chicken is cooked through. The chicken is done when it feels firm to the touch and a meat thermometer inserted in the center reaches 170°F. Transfer the chicken to a clean plate.

tip TIP

TIP: Coconut oil is the new super food! Not only is it healthy, but also it has a high smoke point so is great for high-heat cooking like stir-frying. t also has the added benefit of adding a slight coconut flavor to your Sweet and Sour Chicken.

Simmer

To the hot wok, add the sweet and sour sauce mixture and bring to a simmer. Simmer for 1 to 2 minutes until the sauce starts to reduce. In a small bowl, whisk together the cold water and the remaining 1 tablespoon of cornstarch. Stir the cornstarch mixture into the sauce and simmer until thickened. Toss the chicken with the sauce and cook for 1 to 2 minutes.

Serve

Transfer to a platter and garnish with toasted sesame seeds and chopped chives, if desired. Serve with steamed broccoli and brown rice.
