Ingredients
2 pkg. PERDUE® SHORT CUTS® Carved Chicken Breast, Rotisserie Seasoned, (9 oz.) or PERDUE® SHORT CUTS® Carved Chicken Breast, Original Roasted (9 oz.)
1 medium apple, seeded, divided
2 hard boiled eggs, divided
1/2 cup mayonnaise
1 teaspoon apple cider vinegar
Ground black pepper to taste
Watercress or lettuce
1 can (8 ounces) sweet peas, drained
Instructions
1 Reserve a few apple slices for garnish and chop remaining apple and eggs.
2 Combine chicken, apple, egg, mayo, vinegar and pepper in a large bowl until well blended. 
3 Serve on a bed of watercress or lettuce, sprinkle with peas and garnish with reserved apple and egg slices. Makes 6 cups.
