Ingredients
1 pkg. PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
1/2 cup flour
1/2 teaspoon ground thyme
Salt and ground pepper to taste
2 tablespoons canola oil
1/4 cup minced shallots
1/2 cup sweetened dried cranberries
1/2 cup white or red balsamic vinegar
1 tablespoon butter or margarine
1 tablespoon minced fresh parsley, optional
Instructions
1 In shallow bowl, combine flour, thyme, salt and pepper. Flour chicken, shaking off any excess.
2 In a large nonstick skillet, over medium-high heat, heat oil.
3 Add chicken, reduce heat to medium, and cook 6 to 8 minutes per side until golden brown and cooked through. Remove chicken to warm platter.
4 Add shallots and cranberries to skillet; sauté 1 minute. Add balsamic vinegar and cook stirring for 1 minute, until vinegar has reduced to about 1/4 cup. Remove from heat, and swirl in butter.
5 Spoon sauce over chicken, and sprinkle with parsley.
