1 tbspolive oil

1 tbspfresh rosemary, chopped

1/2 tspsalt

1/4 tspblack pepper

1 cupwhite wine

1/2 cupfresh cranberries

3 springs fresh rosemary

1/4 cuphoney


Step 1

Preheat your oven to 375 degrees F. In an oven proof skillet, heat the olive oil over medium high heat. Add the chicken and season with rosemary, salt and pepper. Sauté for 2 to 3 minutes on one side.

Step 2

Turn the chicken over and add the white wine. Top the chicken with the cranberries. Tuck the rosemary sprigs into the skillet and place in the oven. Bake for about 20 minutes until chicken is done. Chicken is done when a meat thermometer inserted in the center reaches 170 degrees F.

Step 3

Remove the skillet from the oven. Transfer chicken to a platter and cover to keep warm. Whisk the honey into the warm pan juices until melted.

Step 4

Pour the skillet pan sauce over the chicken and serve.
