Ingredients
1 pkg. PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
1/4 cup vegetable oil
1 cup cornmeal
1 1/2 tablespoons celery salt
1 tablespoon ground black pepper
1 can whole berry cranberry sauce (16 ounces)
1 can mandarin orange sections (11 ounces)
2 tablespoons orange liqueur
Instructions
1 Cut chicken into ¾" strips.
2 Heat oil in a large, nonstick skillet over medium high heat.
3 In a shallow bowl, combine cornmeal, celery salt and pepper. Press tenderloins into cornmeal mixture, coating well. Add to pan, and cook until chicken is no longer pink, and coating is browned, 2 to 3 minutes per side.
4 Meanwhile, in a medium saucepan, mix cranberry sauce, mandarin oranges and orange liqueur. Simmer until heated through. Serve with tenderloins.
5 Keep leftover Cranberry Orange Sauce in the refrigerator and use it for topping chicken or turkey burgers!
