4 PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts
3/4 cup chicken stock
1/2 tsp each salt and pepper
3/4 cup all-purpose flour
1 tbsp oil
1 lemon, sliced
1/4 cup dry white wine
1/4 cup capers, drained
3 tbsp lemon juice
4 cloves garlic, thinly minced
3 tbsp butter
1/4 cup fresh parsley, chopped
1 Season chicken with salt and pepper. Coat the chicken in flour; shake off the excess. Heat the oil in a large nonstick skillet set over medium-high heat.
2 Cook the chicken for 5 minutes per side or until golden and cooked through. Transfer to a platter and arrange lemon slices over the chicken; tent with foil.
3 Add the chicken stock, wine, capers, lemon juice and garlic. Simmer for 2 minutes. Whisk in the butter. Pour over chicken and sprinkle with parsley.
