|1||can (14 1/2 ounces) diced tomatoes with garlic and onion|
|1/2||teaspoon Italian seasoning|
|1||log (11 ounce package) prepared polenta, cut into 16 slices|
Heat oil in large non-stick skillet over medium high heat. Add chicken breasts; sauté 2 minutes per side. Reduce heat to medium low; stir in tomatoes and seasoning. Top with polenta slices.
TIP: This recipe may easily serve 2 people instead of 4 people by using half the quantity of all ingredients (that’s 1/2 can diced tomatoes, 1/4 teaspoon of Italian seasoning and 1/2 package prepared polenta).
