Grilled Mojo Chicken with Pineapple Salsa

2 tablespoonsolive oil
1 can(14 1/2 ounces) diced tomatoes with garlic and onion
1/2 teaspoonItalian seasoning
1 log(11 ounce package) prepared polenta, cut into 16 slices
Heat oil in large non-stick skillet over medium high heat. Add chicken breasts; sauté 2 minutes per side. Reduce heat to medium low; stir in tomatoes and seasoning. Top with polenta slices.
TIP: This recipe may easily serve 2 people instead of 4 people by using half the quantity of all ingredients (that’s 1/2 can diced tomatoes, 1/4 teaspoon of Italian seasoning and 1/2 package prepared polenta).
Cover; cook 6 to 8 minutes or until juices run clear and a thermometer inserted into center of chicken breast registers 170°F.
Place 4 slices of polenta and 1 chicken breast on each plate. Serve with tomato sauce.
