Ingredients
4 PERDUE® HARVESTLAND® Frozen Boneless Skinless Chicken Breasts, Individually Wrapped (3 lbs.)
2 ounces goat cheese
2 tablespoons fresh basil leaves, minced
2 teaspoons prepared pesto sauce
1/2 teaspoon grated lemon peel, yellow part only
4 tablespoons whole milk
2 teaspoons lemon juice
1 tablespoon olive oil
Salt and pepper to taste
Instructions
1 Preheat grill or broiler.
2 Combine goat cheese, basil, pesto and lemon peel in a small bowl. Add milk, 1 tablespoon at a time. Stir in lemon juice to thicken the sauce. Set aside.
3 Brush chicken with oil; season with salt and pepper. Grill or broil chicken, 4-5 minutes per side or until meat thermometer inserted in center registers 170°F. 
4 To serve, spoon 2 tablespoons sauce over chicken breasts.
