PERDUE® SIMPLY SMART® Lightly Breaded Chicken Chunks (20 oz.)
3 loaves of french bread
2 cups shredded lettuce
3 large, ripe tomatoes, sliced
spicy bread and butter pickles
1 cup mayo
3 tbsp dijon mustard
1 tbsp hot sauce
1 tbsp sweet pickle juice
2 tsp smoked paparika
1 tsp prepared horseradish
1/2 tsp cajun seasoning
1 clove garlic, minced and smashed
1 Bake the chicken according to package directions.
2 Slice the bread almost all the way through but leave a "hinge" on the bottom.
3 Open it up, brush with olive oil, and toast under the broiler, watching carefully so it doesn't burn.
4 Spread a layer of the remoulade on the toasted bread.
5 Cover with shredded lettuce.
6 Lay tomato slices over the lettuce.
7 Place pickle slices over the tomatoes.
8 Add a generous amount of the hot chicken chunks and drizzle with more remoulade.
9 Remoulade Sauce - Mix all ingredients together. Let stand overnight if possible for the flavors to blend.Store in a tightly covered container in the refrigerator.
