In the past few days, we’ve experienced heavier than normal call volume as customers reach out with concerns about sourcing of our products and quality control measures we’ve put in place to guarantee the freshness and safety of the foods we ship. In light of concerns over Coronavirus (COVID-19), we’d like to share the following:

COVID-19 is Not Considered a Food-Borne Pathogen

Per the Centers for Disease Control and Prevention (CDC), COVID-19 is most commonly spread between those who are in close contact with each other, and through respiratory droplets produced when an infected person coughs or sneezes. It may also be possible for a person to contract COVID-19 by touching a surface or object that has the virus on it and then touching his or her own mouth, nose or possibly eyes, but this is not thought to be the main way the virus spreads. We have strict biosecurity protocols throughout our farms and entire supply chain, including proven sanitation methods which minimize the risk of contaminated surfaces.

Perdue Farms Takes Food Safety Protocols Seriously

We have the highest standards of biosecurity and food safety, and fully sanitize our facilities every 24 hours. We are closely monitoring affected areas and reiterating our biosecurity policy to help minimize the potential to transport possibly contaminated surfaces. The staff at the onsite Wellness Centers at 19 of our facilities are trained on how to protect our associates from, and identify and respond to, symptoms of COVID-19. These professionals follow standard operating procedures as defined by the CDC for infectious diseases. The Wellness Centers are available to all associates and their families. We are taking every precaution to protect our associates, communities, customers and business partners, and ensure the continuity of our business.

All of our animals are born/hatched, raised, harvested and processed in the U.S. As with most large businesses, we source some (non-food) elements of our supply chain from countries outside the U.S. We are closely monitoring affected areas and reiterating our biosecurity policy to help minimize the potential to transport possibly contaminated surfaces.

1 ¼ tsp.salt, divided

3/4 tsp.black pepper, divided

4 tbsp.olive oil, divided

1 (8 oz.) box white, cremini, or mixed mushrooms, sliced

2 cloves garlic, chopped

1 (8-oz.) bunch swiss chard, stems removed and chopped

1 cupricotta cheese

1/4 cup grated parmesan cheese

1 store-bought pie crust

1 egg, beaten

1/2 cupfresh herbs, for garnish

Sauté

Season the PERFECT PORTIONS® chicken breasts with 1/2 teaspoon salt and 1/4 teaspoon black pepper. In a large skillet, heat 2 tablespoons of olive oil over medium high heat. Add the chicken and sauté for 3 to 4 minutes per side until cooked through. Chicken is done when a meat thermometer inserted in the center reaches 170°F. Transfer to a cutting board to rest. When cool enough to handle, shred chicken into bite sized pieces. To the same skillet, heat 1 tablespoon of olive oil then add the mushrooms. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Sauté until mushrooms are golden brown, about 5 to 7 minutes. Transfer the mushrooms to a bowl. Heat the remaining tablespoon of oil over medium heat. Add the garlic and sauté about 30 seconds. Add the Swiss chard, cover and sauté until wilted, about 3 minutes. Season with 1/4 teaspoon salt 1/8 teaspoon and black pepper. Transfer the Swiss chard to a plate to cool.

In a small bowl, combine the ricotta and Parmesan cheese, remaining salt and black pepper. Roll the dough into a 14-inch round and place on a parchment lined baking sheet. Spoon the ricotta cheese mixture over the dough, leaving a 2-inch border. Top with the Swiss chard, the shredded chicken, and then the sautéed mushrooms.

Fold

Preheat your oven to 400°F. Fold the edges of the dough up and over the chicken filling, creating a 1-inch border. Brush the dough border with the beaten egg. Bake until crust is golden brown and the filling is heated through, about 30 to 35 minutes. Remove the galette from the oven and let cool.

Serve

Garnish Chicken Mushroom and Swiss Chard Galette with fresh herbs if desired. Cut into wedges and serve.
