Ingredients
1 pkg. PERDUE® Refrigerated Whole Grain Breaded Chicken Breast Cutlets, Italian Style (12 oz.)
2 tablespoons olive oil
4 large plum tomatoes, chopped
3 cloves garlic, finely chopped
3 tablespoons chopped fresh basil leaves
2 teaspoons balsamic vinegar
1/8 teaspoon black pepper
1/2 cup (2 ounces) Parmesan cheese, shredded (optional)
Instructions
1 Heat chicken according to package directions.
2 Meanwhile, mix tomatoes, garlic, basil, balsamic vinegar, pepper and olive oil in a large bowl.  Spoon tomato mixture evenly onto heated chicken.
3 Top each cutlet with a sprinkling of Parmesan cheese, if desired and serve warm.
