Step one: Crisp

Preheat oven to 425°F. Place chicken cutlets on baking sheet and bake for 3 to 4 minutes. Turn chicken over and bake another 3 minutes until heated through and crisp.

Step two: Layer

Remove chicken from the oven. Lay 1 slice of smoked ham and 1 slice of cheese on each chicken breast.

Step three: Broil

Reposition the oven rack and turn the oven setting to “broil.” Broil for 1 to 2 minutes until the cheese has melted.

Step four: Serve

Remove the Chicken Cordon Bleu from the oven and serve with asparagus or green beans.

Step one: Butterfly

Preheat oven to 425°F. Place a chicken breast on a cutting board. Place your hand flat on top of the breast. Use a sharp knife to slice into one side of the breast, starting at the thicker end and ending at the thin point. Be careful not to cut all the way through to the other side. Open the breast so that it looks like a butterfly. Cover it with plastic wrap and pound it with a rolling pin or meat mallet to create an even thickness. Slice in half lengthwise to create 2 equal pieces of chicken breast. Repeat with the second breast.
