Ingredients
2 packages PERDUE® Fresh Lean Ground Turkey (alternate: PERDUE® Fresh Ground Chicken) 2 tablespoons vegetable oil 1 cup chopped onion 3 tablespoons chili powder 1 tablespoon ground cumin 2 teaspoons dried oregano leaves 1 teaspoon salt 1 can (28 ounces) fire reoasted or regular diced tomatoes 1 can (15 ounces) black beans, drained 1 can (15 ounces) dark red kidney beans, drained 1 can (15 ounces) pinto beans, drained 1 can (12 ounces) non-alcoholic or light beer Garnishes such as sour cream, Cheddar cheese, cilantro, green onions (optional)
Instructions
- Heat oil in a large skillet over medium-high heat. Add turkey and onion; cook about 5 minutes or until turkey is brown and no pink remains. Stir frequently breaking up turkey into crumbles as it cooks. Drain and add remaining ingredients except garnishes. Bring to a boil then reduce heat and simmer for 30 minutes or longer.
- Serve warm. Top each serving with garnishes, if desired.

We made this recipe for a large crowd and it was easy and received rave reviews. Due to the volume needed, we browned the meat and onion in one pan, simmered the tomatoes, beer and spices in another. We transfer it all to a "turkey fryer" and mixed in the beans. Served over rice and with cheese as a topping, 200 enjoyed this treat.
