Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Turkey Breast Tenderloins 6 tablespoons peanut oil, divided 1 small bunch scallions, cut diagonally into 1-inch pieces 1 red bell pepper, julienned 1 medium-sized zucchini, julienned 1 can water chestnuts, drained, sliced (8 ounces) 1 clove garlic, minced 1 tablespoon reduced-sodium soy sauce 2 cups shredded Chinese cabbage 4 cups cooked oriental noodles or other pasta (8 ounces uncooked) 1/3 cup Light Teriyaki Sauce Fresh cilantro (coriander) sprigs (optional)
Instructions
- Slice tenderloins lengthwise in half along natural crease. Cut turkey into, 1-inch chunks.
- In wok or large nonstick skillet over medium-high heat, heat 2 tablespoons oil. Add turkey and stir-fry 2 to 3 minutes. Add scallions and peppers; cook 1 minute longer, stirring constantly. Add zucchini, water chestnuts and garlic; stir-fry 1 minute longer or until vegetables are tender-crisp and turkey is cooked through. Stir in soy sauce and set aside.
- In large bowl, combine shredded cabbage and noodles.
- In small bowl, whisk together remaining peanut oil and teriyaki sauce. Add turkey mixture to bowl; toss with teriyaki mixture.
- Garnish with cilantro and serve with oriental-style corn or rice chips and iced tea.
