Ingredients

1 package PERDUE® Fresh Ground Turkey (alternate: PERDUE® Fresh Ground Chicken)
2 tablespoons tomato paste
1 1/2 teaspoons minced fresh tarragon
Sprigs of fresh tarragon (optional)
Salt and ground pepper to taste
4 tomato slices
2 English muffins, split, lightly toasted
Tarragon Mustard Sauce (recipe follows)

 

Instructions
  1. Preheat broiler or prepare grill.
  2. In medium bowl, combine turkey or chicken, tomato paste, tarragon, salt and pepper.
  3. Form into 4 or 5 burgers and broil or grill 4 to 6 minutes on each side, or until burgers are cooked through and spring back to the touch.
  4. Place a slice of tomato and a burger on top of each English muffin half. Top with warm Tarragon Mustard Sauce.

Tarragon Mustard Sauce

In top of double boiler set over hot water, blend 1 1/2 tablespoons butter or margarine, and 1 1/2 tablespoons Dijon mustard. Remove from heat; add 1 tablespoon tarragon vinegar. Stir in 1/4 cup light sour cream and 1 teaspoon minced fresh tarragon or 1/4 teaspoon dried tarragon leaves. Season with salt, ground black pepper and ground red pepper to taste.
