Ingredients
1 PERDUE® Fresh Turkey Beer (optional) 1/2 cup onion powder 2 tablespoons allspice 1 tablespoon ground red pepper 2 tablespoons brown sugar, tightly packed 1 tablespoon dried thyme 1 tablespoon cinnamon 1 tablespoon nutmeg
Instructions
- Prepare smoker grill for cooking, adding soaked wood chunks and filling water pan 2/3 full with water and/or beer, following smoker directions. Bring temperature to 180° F. to 220° F.
- Meanwhile, remove PERFECT ROAST® Thermometer and all giblets from turkey.
- Combine remaining ingredients. Gently loosen skin and rub this jerk mixture all over bird, in skin-breast pocket, and inside cavity.
- Place bird on grate over water pan. Smoke cook for 6 hours or until a meat thermometer inserted in thickest part of thigh registers 170° F. (In cool weather, smoking may take longer.)
- Check water pan occasionally during smoking, and add soaked wood chunks if necessary.
