Ingredients
3 cups chopped or shredded cooked PERDUE® Turkey 1/4 cup vegetable oil 1 carrot, peeled and thinly sliced 1 small onion, peeled and thinly sliced 1 apple, peeled, cored and thinly sliced 3 tablespoons all-purpose flour 2 tablespoons curry powder 1/2 teaspoon ground red pepper (optional) 1/4 teaspoon ground black pepper 1 can (13 3/4 ounces) chicken broth 1/2 cup cup whipping cream Salt Hot cooked rice or baked pastry shells Chutney, raisins and slivered almonds (optional)
Instructions
- In large skillet over medium heat, heat oil.
- Add carrot, onion and apple; sauté 1 minute. Stir in flour, curry powder and ground peppers. Blend well; cook 1 to 2 minutes.
- Stir in broth and cream; cook 1 to 2 minutes until thickened, stirring often. Stir in turkey and heat through. Season to taste with salt.
- Serve over rice; garnish with chutney, raisins and almonds, if desired.
