Ingredients

1 package PERDUE® Fresh Ground Turkey (alternate: PERDUE® Fresh Ground Chicken)
4 tablespoons Italian seasoned breadcrumbs
1 small carrot, peeled and finely grated
3 scallions, minced
1/2 teaspoon ground pepper
1 egg, lightly beaten
1 tablespoon olive oil
1 package (8 ounces) ready-to-use mixed salad greens
8 tablespoons bottled Thousand Island dressing
5 tablespoons capers, drained (optional)

 

Instructions
  1. Preheat oven 400°F.
  2. In a bowl, combine turkey or chicken, breadcrumbs, carrot, scallions, pepper and egg. Shape mixture into 8 round, flat cakes.
  3. Place oil in a large skillet on medium-high heat. Add turkey or chicken cakes and brown for 3 minutes on each side.
  4. Transfer cakes to baking sheet and continue to cook for 20 minutes in the oven, turning them once after first 10 minutes.
  5. When turkey or chicken cakes are cooked through, divide greens between 4 dinner plates. Place turkey or chicken cakes on greens. Spoon 2 tablespoons of dressing over each plate. Sprinkle each plate with 1 tablespoon of capers, serve immediately.
