Ingredients
1 package PERDUE® Fresh Ground Turkey (alternate: PERDUE® Fresh Ground Chicken) 4 tablespoons Italian seasoned breadcrumbs 1 small carrot, peeled and finely grated 3 scallions, minced 1/2 teaspoon ground pepper 1 egg, lightly beaten 1 tablespoon olive oil 1 package (8 ounces) ready-to-use mixed salad greens 8 tablespoons bottled Thousand Island dressing 5 tablespoons capers, drained (optional)
Instructions
- Preheat oven 400°F.
- In a bowl, combine turkey or chicken, breadcrumbs, carrot, scallions, pepper and egg. Shape mixture into 8 round, flat cakes.
- Place oil in a large skillet on medium-high heat. Add turkey or chicken cakes and brown for 3 minutes on each side.
- Transfer cakes to baking sheet and continue to cook for 20 minutes in the oven, turning them once after first 10 minutes.
- When turkey or chicken cakes are cooked through, divide greens between 4 dinner plates. Place turkey or chicken cakes on greens. Spoon 2 tablespoons of dressing over each plate. Sprinkle each plate with 1 tablespoon of capers, serve immediately.
