Ingredients
1 PERDUE® Whole Turkey 10-14 lbs. 2 tablespoons canola oil 1 teaspoon ground cumin Salt and freshly ground pepper to taste 1 can (7 ounces) chipotles chilies 1/4 cup honey 1/4 cup fresh lime or lemon juice
Instructions
- Remove giblets, rub turkey with oil, season with cumin, salt and pepper.
- Roast, over moderate indirect heat, on covered grill, or in preheated 325° F oven. Allow 15 to 20 minutes cooking time per pound.
- In a small bowl, combine 1 1/2 to 2 tablespoons of sauce and chilies from can of chipotles with honey and lime juice. (Chipotles are HOT, a little goes a long way. Freeze remaining chilies and sauce if desired.)
- During last 30 minutes of roasting, baste turkey 1 to 2 times with chipotle mixture. Turkey is done when PERFECT ROAST® Thermometer pops up and meat thermometer inserted in thickest part of thigh registers 180° F.
- Remove and discard PERFECT ROAST® Thermometer before serving.
