Ingredients
1 package PERDUE® Fresh Ground Turkey (alternate: PERDUE® Fresh Ground Chicken) 3/4 cup finely chopped onions 1/2 cup seasoned dry bread crumbs Grated Parmesan cheese 1 can (6 ounces) tomato paste, divided 1 teaspoon dried Italian seasoning 1 jar (30 ounces) chunky vegetable spaghetti sauce 8 ounces small rigatoni, cooked and drained
Instructions
- In medium bowl, mix well turkey or chicken, chopped onions bread crumbs, 1/4 cup grated Parmesan, 3 tablespoons tomato paste and Italian seasoning. Shape mixture into 12 meatballs.
- In 10 inch microwave safe pie plate, arrange meatballs in a circle; cover with wax paper. Microwave at HIGH (100% power) 6 minutes.
- Rearrange and turn meatballs. Re-cover and microwave at HIGH 4 to 6 minutes longer.
- Meanwhile, in medium bowl, combine spaghetti sauce and remaining tomato paste; add cooked meatballs. Discard juices from pie plate.
- Place rigatoni in plate; spoon in meatballs and sauce to combine.
- Cover with wax paper. Microwave at HIGH 5 minutes or until sauce is bubbly. Sprinkle with additional Parmesan; cover and let stand 5 minutes before serving.
