Chopped fresh cilantro for garnish (optional)
2 tablespoons canola oil, divided
1/2 cup chopped onion
1 can (4 ounces) mild chopped green chilies
Salt and ground pepper to taste
1 can (14 ounces) enchilada sauce
12 (6 inch) corn tortillas
1 package (8 ounces) shredded Mexican cheeses
Sour cream for garnish (optional)

Instructions

  3. Spoon a thin layer of enchilada sauce in the bottom of pan. Add a layer of 4 overlapping tortillas. Spoon one third of meat mixture over tortillas. Drizzle with enchilada sauce and sprinkle with 1/2 cup cheese.Continue to layer in this manner until all ingredients are used, ending with a layer of cheese. Mexican Lasagna

I loved it. Had only a 11x7 pan, and made the recipe lighter & healthier, by using light sour cream, and La Tortilla Factory Whole Wheat only 50 calories each. My recipe used only 6 tortillas with my pan size also. It fed 4 of us!

I personally felt it could have used more spice, and I like my food milder than most. I would add a taco seasoning packet when cooking up the turkey. Other than that our whole family loved it!

This recipe is outstanding. I've made it with the chicken rather than turkey and it's been a huge hit with everyone.
