Ingredients
1 package PERDUE® Fresh Turkey Thighs 1 package PERDUE® Fresh Turkey Drumsticks 2 tablespoons vegetable oil 2 1/2 cups water 1 can (14.5 ounce) tomatoes with chilies with juices 1 can (11 ounce) corn, drained 1 Juice of lime 1 large onion, chopped 1 teaspoon dried oregano 1/2 teaspoon salt 1/2 teaspoon pepper 1 cup chopped fresh cilantro 1 cup long-grain white rice
Instructions
- Heat oil over medium-high heat in 8-quart Dutch oven. Add thighs and drumsticks and brown, turning once (about 5 minutes per side).
- Add water, tomatoes with chilies, corn, lime juice, onion, oregano, salt and pepper to pot. Bring to boil and immediately reduce the heat to low and simmer partially covered for 20 minutes. Turn the turkey pieces once. Add more water if too much liquid has evaporated.
- Add cilantro and rice. Place cover on pot and simmer 15-20 minutes, until rice is tender and liquid is somewhat, but not fully, absorbed.
- Serve immediately.
