Ingredients
1 package PERDUE® Fresh Lean Ground Turkey (alternate: PERDUE® Fresh Ground Chicken) 1 carrot, peeled 1 small zucchini, scrubbed and ends trimmed 1 medium yellow onion, peeled 1/2 cup Italian seasoned dry breadcrumbs 1 egg (alternate: liquid egg substitute) 1 tablespoon dried Italian herb seasoning 1 teaspoon salt 1/4 teaspoon ground pepper Spaghetti with marinara sauce (optional)
Instructions
- Preheat oven to 375° F.
- In food processor, coarsely shred carrot and zucchini; chop onion.
- In mixing bowl, combine turkey with vegetables and remaining ingredients.
- Divide mixture into 4 equal parts. Pat into lightly greased mini-loaf pans or form small, free-form loaves and place on greased baking sheet. Bake loaves 35 to 40 minutes, or until loaves spring back to the touch and meat thermometer inserted in center registers 165° F.
- Serve loaves with spaghetti and marinara sauce, if desired.
