Ingredients
1 package PERDUE® Fresh Ground Turkey (alternate: PERDUE® Fresh Ground Chicken) 1/4 cup prepared pesto 1/4 cup drained sun-dried tomatoes packed in oil, finely chopped 2 medium zucchini, halved crosswise and then thinly sliced lengthwise 1 tablespoon olive or vegetable oil Salt and ground pepper to taste 4 sandwich-size pieces focaccia bread, each split in half for sandwiches Romaine lettuce leaves 1 jar (7 ounces) roasted red peppers, drained and coarsely chopped Balsamic vinegar
Instructions
- If grilling, grease grill. Preheat grill or broiler.
- In medium bowl, combine turkey, pesto and sun-dried tomatoes until blended.
- Shape into 4 burgers to fit shape of bread.
- In medium bowl, toss zucchini with oil, salt and pepper to taste.
- Grill burgers, turning occasionally, 10 minutes or until done.
- Grill zucchini, turning occasionally, until tender.
- Sandwich burgers on focaccia with lettuce, roasted red peppers, grilled zucchini and a drizzle of vinegar.
