Ingredients
1 package PERDUE® Fresh Lean Ground Turkey (alternate: PERDUE® Fresh Ground Chicken) 2 cans (15 ounces) diced tomatoes in juice, undrained 2 tablespoons Worcestershire sauce, divided 1 can (14 ounces) beef broth 8 ounces petite new red potatoes, cut in half 2 cups baby carrots 1 cup white pearl onions, fresh or frozen 1 1/2 teaspoons basil leaves, divided 1/2 teaspoon salt 1/2 teaspoon dried oregano leaves 1/8 teaspoon pepper 2 tablespoons dried bread crumbs
Instructions
- In a large stockpot, combine tomatoes, 1 tablespoon Worcestershire sauce, beef broth, potatoes, carrots, onions, 1 teaspoon basil, salt, oregano leaves and pepper. Bring to a boil then reduce heat and simmer uncovered for 1 hour or until vegetables are tender. Add *cooked turkey meatballs and simmer 20 minutes, stirring occasionally.
- *To make meatballs: In a large bowl, combine turkey, 1 tablespoon Worcestershire sauce, bread crumbs, and 1/2 teaspoon dried basil leaves. Mix well and freeze 10 minutes. Then, form turkey mixture into small (3/4”) meatballs. Heat oil in a large skillet over medium-high heat. Add meatballs; cook about 5 minutes or until meatballs are brown and no pink remains.
